KitKat Sugar Cookie Cake Pops

1. In a large bowl, break up KitKat pieces and mash sugar cookies with room temperature cream cheese to form a dough ball.

2. Separate small sections of cookie dough and form into cake pop bites; set aside on a parchment-lined baking sheet in the fridge until firm.

3. In a small microwave-safe bowl, microwave chocolate chips and coconut oil in 30-second increments, stirring each time until melted and glossy.

4. Once cake pops are firm, insert skewer sticks and dip in chocolate mixture.

5. Top each cake pop with a mini KitKat bar and set in the fridge until the chocolate coating has hardened.

6. Enjoy the cake pops once the chocolate is set.
